Penny Update and Living Math: Cooking

It's been 5 days and still no penny. Little Snail is not in any discomfort or pain so we are still doing the wait and see. If no penny by tomorrow, we will go back to the doctor. Since it has been a no show, I thought that I should try to flush it out. So we made sweet potato casserole. Cooking is one of our best Living Math activities. The Snails get to estimate, measure, pour, mix, and stir.

It worked!! Little Snail has used the bathroom twice since she has eaten (about 1/4 of what I made) of the sweet potato casserole.


Penny Moving Sweet Potato Casserole

3 c. cooked mashed sweet potatoes
1 1/2 c. brown sugar
2 eggs, well beaten
1/2 tsp. salt
1 1/2 tsp. vanilla
1/2 stick of melted butter
1/2 c. milk

Topping:
1/2 c. brown sugar
1/3 c. flour
1 c. chopped nuts
1/2 c. melted margarine

Combine ingredients except for topping. Put in 9x13 dish coated with cooking spray. Top with combined topping ingredients. Bake at 375 for 45 minutes.
